Ingredients:

  • 250g Dry Lentils (Black Lentils are the highest in nutrients and taste the richest)
  • 500ml Water
  • 1 Onion
  • Salt
  • Black Pepper

Optional Extras:

  • Soy Sauce
  • Siracha Sauce

Steps:

  1. Dice onion
  2. Place all ingredients in a pot on the stove at highest heat with the lid on
  3. Stir occasionally  until all water is absorbed and lentils are soft (may have to add a touch more water during the process)

Note: The pot should be no more than 3/4 full with all ingredients in. swelling of lentils increases in size, if the pot is too small you won't be able to stir it later in the cooking process resulting in the bottom lentils burning to the bottom of the pot.

Serves: 6 - 8

P.S. Lentils are a great rice substitute as they contain way more protein and nutrients and are around a similar price.
