Ingredients:
- 1 Potato (sweet potato or regular)
 - 6-8 leaves of Spinach (remember it shrinks when cooked)
 - Grated Cheese (as much as you can afford)
 - 2 big spoons Mayonnaise
 - 1 Cup Water
 - Salt & Pepper
 
Optional Extras:
- Garlic & Herb spice
 - Feta
 - Siracha Sauce
 
Steps:
- Put water and spinach in a pan on the stove with a lid on.
 - Let boil until spinach has shrunk (a lot) stirring occasionally.
 - Pour out excess water.
 - Add mayonnaise (and optional extras).
 - Stab the potato a couple times with a fork (don't question me).
 - Put potato in the microwave for 3 - 5 Minutes, depending on potato size.
 - Remove the potato when it's squeezable.
 - Cut the potato in half.
 - Using a teaspoon, remove the potato's insides and add them to the spinach. (leaving a layer of potato in the potato skin to stop it from falling apart)
 - Place potato shells on a baking sheet hole side up.
 - Carefully spoon Spinach potato mix into potato shells.
 - Add grated cheese on top of stuffed potato.
 - Add salt and pepper.
 - Place in the oven (or tv griller) on grill until cheese is golden.
 - Wait to cool (I know, it'll be hard)
 - Enjoy!
 
Serves: 1 - 2
Hint: If you put a sheet of tinfoil on your baking sheet you don't have to clean it afterwards, you can just throw away the tinfoil.
