Lentil Curry

Ingredients:

  • 1 Cup Lentils
  • 2 Cups Water
  • 1 Corn (or half a can, rinsed)
  • 3 Mushrooms (approx. 1/2 Cup)
  • 1 Tomato
  • Pinch of Salt
  • Black Pepper

Optional Extras:

  • Soy Sauce
  • Siracha Sauce
  • Garlic & Herb mix
  • Meat spice mix

Steps:

  1. Dice mushrooms and tomato
  2. Remove corn from cob
  3. Place lentils, water and salt into pot to boil until lentils are soft (approx. 20 minutes)
  4. Add mushrooms, tomato, corn (and optional extras)
  5. Let boil with lid cocked to the side until sufficient water has evaporated or mushrooms are cooked
  6. Wait to cool and enjoy!

Note: If there appears to be too little water, add little bits as needed to prevent curry from burning to the bottom of the pot.
