- Mince and Kale Bolognese
Ingredients:
- 500g Mince (I used beef but you could use any)
- 1 Tin Black Beans
- 6 - 7 Big Kale Leaves
- 1 Tablespoon Tomato Paste (or more, if you like tomato)
- 1 Tablespoon Mayonnaise
Optional Extras:
- Juice from Half a Lemon
- Mixed Herbs
- Paprika
Steps:
- Remove kale leaves from stems breaking it up so you won't just get a mouthful of leaf. (approx. 4cm x 4cm)
- Wash kale thoroughly, squashing it with your hands (this decreases bitterness, apparently)
- Boil kale until it loses its grey colour, or has about halved volume.
- Remove and strain kale.
- Add a drop of oil to the bottom of a pan, once heated add mince, tomato paste, mayonnaise, (and optional extras)
- Rinse black beans under running water until water runs clear
- Once mince is cooked, mix in kale and black beans
- Season and Enjoy!
