Mince and Kale Bolognese

Ingredients:

  • 500g Mince (I used beef but you could use any)
  • 1 Tin Black Beans
  • 6 - 7 Big Kale Leaves
  • 1 Tablespoon Tomato Paste (or more, if you like tomato)
  • 1 Tablespoon Mayonnaise

Optional Extras:

  • Juice from Half a Lemon
  • Mixed Herbs
  • Paprika

Steps:

  1. Remove kale leaves from stems breaking it up so you won't just get a mouthful of leaf. (approx. 4cm x 4cm)
  2. Wash kale thoroughly, squashing it with your hands (this decreases bitterness, apparently)
  3. Boil kale until it loses its grey colour, or has about halved volume.
  4. Remove and strain kale.
  5. Add a drop of oil to the bottom of a pan, once heated add mince, tomato paste, mayonnaise, (and optional extras)
  6. Rinse black beans under running water until water runs clear
  7. Once mince is cooked, mix in kale and black beans
  8. Season and Enjoy!
